I’ve called this section Breakfast and Lunch, as all these recipes can be used for either meal, although they could also be used to make an evening meal, or brunch. These recipes focus on using whole foods, moving away from bread and cereal based choices, as I find recipe ideas for these kinds of meals can be challenging for those who are avoiding any member of the the grain family for health reasons.
Many of these recipes have eggs in them. I describe eggs as a magic capsule of goodness and natures multi-vitamin, having every nutrient required for human health, except vitamin C. So eat your eggs with tomato, capsicum, or spinach and you’re off to a good start.
Because eggs can be cooked so many different ways, they can become virtually any texture from soft and creamy, or firm and formed, allowing for enormous variety in meal options.
Eggs boast many health benefits and are indicated for heart health, pregnancy, breastfeeding and weightless to name a few. They are high in protein, low in calories and extremely satisfying. Nutritional guidelines used to limit egg consumption due to concerns about their cholesterol content. It is now known that this is not a health concern and you can eat eggs freely.
